Far Cider is made from a blend of organic Northern California apples with no flavorings, sweeteners, or preservatives added. Fermentation happens naturally, with native yeasts kicking off the action and a gradual barrel fermentation taking it through full dryness. Extended barrel ageing for anywhere from 1-3 years allows for gravity based filtering and adds extra layers of complexity, leading to a tart, farmhouse style reminiscent of traditional Basque ciders. Only a small handful of barrels are made every year and each bottling is done by hand.
